Quoted in Restaurant magazine, Michel Roux’s favourite piece of kit is his Global knives:
“I have a real soft spot for Global knives. They are great knives and they look beautiful, which I think is all part of the cooking process. I love beauty and beautiful bits of equipment and I firmly believe that something works better when it looks good. The knives are nice and light, they feel good in the hand and are good to cut with as well.”
